Gluten-Free High Protein Muffins

Tonight's creation was One Bowl Easy Versatile High Protein Muffins--ahhh the house smells wonderful!!!

Ingredients

  • 1 cup Outrageous Baking Gluten-Free Flour Mix
  • 1 cup almond cashew, or a nut flour of your choice if you can't do nuts just do 2 cups O.B. flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp gluten-free baking powder
  • 1/4 tsp salt
  • 1/2 cup butter melted or Earth Balance or you may use 1/4 cup of butter and an 1/8 cup of yogurt of your choice
  • 4 eggs
  • 1/3 cup of almond/rice/coconut or any kind of milk
  • 1/3 cup of honey or agave
  • 2 apples chopped into small pieces could use really any fruit peaches would be amazing as well as just raisins and or blueberries.

Instructions

  • Mix eggs, milk of your choice, honey,yogurt (if using) &melted butter, thoroughly combine.
  • Next add flour (both kinds), baking soda, baking powder, & salt.
  • Mix once again,
  • Now add apples or fruit of your choice and finish incorporating
  • Place in muffin pans with cupcake liners
  • Sprinkle with palm sugar.
  • Bake at 350 for about 15 to 20 minutes
  • Makes about 15-20 minutes
  • Great quick breakfast for kids heading out the door, or for a healthy lunch snack.

Notes

I added about 1/2 tsp cinnamon, 1/8 tsp ginger and 1/8 tsp cloves but feel free to add more or less I would only do this kind of spice with the apple, peach and or raisins add-ins, not with the blueberry.
