The Gluten Free Lunchbox

If you have kiddos, then you know that school is back in session! And you may be stumped on what to pack for lunches. It’s easy to get in a slump and pack the same tried-and-true lunchbox over and over again. It gets boring for your kids, it gets boring for you!

Lucky for you, Outrageous is here to help stave off that slump! Here are 5 easy lunchbox combos to try in the coming weeks:

1. Eating Well’s Rice and Bean Burritos:

These make-ahead burritos are delicious and convenient! Replace the whole-wheat tortillas with corn tortillas, add spices to taste (don’t be afraid to deviate from the recipe!) and make a whole batch so you can toss one in a lunchbox as you’re running out the door! For a balanced meal, don’t forget a side of fruit and veggies!

2. MOMable’s genius Quinoa Mac & Cheese:

This kid- and adult-friendly recipe is a healthy alternative to Mac & Cheese that is sure to please! I am honestly going to try this recipe myself at my first opportunity. Who doesn’t love Mac & Cheese? 

 

3. Alexis’ Light Egg Salad Sandwich:

For the more adventurous kiddos, an egg salad sandwich on grain-free bread is sure to be a fun change to PB&J. Try out this grain-free blender bread recipe from MOMables and let us know how it went! 

4. Health-Bent’s Italian Sub Roll-Up:

This easy meal is also Paleo! An insanely easy sandwich-sans-the-bread that you can throw together in a few minutes and your kids will love. Load it with veggies to sneak a little extra nutrition to your unsuspecting offspring. 

5. Budget Savvy Diva’s Chicken Chili:

This will be a great recipe when the weather cools off. Make a huge crockpot and send it in a thermos for lunch for weeks after! Forego the cheese and this is dairy-free as well! This recipe makes me long for fall.
