Super Yummy Gluten Free Chocolate Cupcakes with Cream Cheese Frosting

Ingredients
- 1 cup Outrageous Baking All Purpose Gluten Free Flour
- 1 cup granulated sugar
- 1/2 cup cocoa
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon espresso powder or 1 teaspoon of Coffee Extract
- 1/2 cup milk can use any kind of milk
- 1/4 cup coconut oil avocado oil, sunflower oil, or an oil of your choice
- 1 large egg
- 1/2 teaspoon vanilla
- 1/2 cup boiling water

- Cream Cheese Frosting
- 1/2 cup butter softened
- 8 ounces cream cheese
- 4 cups confectioners' sugar
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 325 degrees F.
- Place Cupcake liners in muffin tins.
- Add all dry ingredients into a large bowl and combine.
- Add milk, oil, eggs, vanilla, and coffee extract if using instead of espresso powder, to the flour mixture and mix together on medium speed until well combined.
- Reduce speed to low and add boiling water.
- Beat on high for 1 minute to air out the batter.
- Scoop batter into cupcake liners, each should be half full.
- Put in oven for about 20 minutes or until a toothpick comes out of the center clean.
- Cool and frost.
Cream Cheese Frosting Directions
- Beat softened butter and cream cheese until well blended.
- Add powdered sugar and vanilla and beat until creamy.
