The Perfect Pancake Recipe
- 1 cup Outrageous Baking All- Purpose Flour Mix
- 1/2 tsp salt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup milk
- 2 Tbsp lemon juice
- 1 egg, separated
- 2 Tbsp sugar
- 2 Tbsp oil
In a mixing bowl, combine flour, salt, baking soda, and baking powder.
In another bowl, combine milk, lemon juice, and egg yolk and add dry flour mixture and stir gently. Do not over mix.
Beat egg white until stiff peaks form, add sugar and blend for a second longer.
Gently fold egg whites into flour/egg mixture, paying special care not to over mix.
Cook on a non-stick skillet. When making the pancakes, spread the batter out into a small circle. Cook on one side until bubbles begin to form around the edges, then flip.
When both sides are golden, take the pancakes off the skillet. Top with berries, whipped cream, maple syrup, etc.
